Grilled Fish Tacos

INGREDIENTS

  • 1 - 2 pounds haddock or cod filets

  • Juice from lime

  • 1 teaspoon salt

  • 1 teaspoon freshly ground black pepper

  • 1 1/2 teaspoons garlic powder

  • 1/4 cup chives or cilantro - chopped

  • 1 tablespoon EVOO

  • Rice or butter lettuce for serving

  • Desired taco toppings (chopped red onion, avocado, mango, lettuce, tomato, etc.)

INSTRUCTIONS

  1. Preheat the grill to 650°F.

  2. While the grill preheats, prepare fish. Start by laying out aluminum foil large enough to wrap fish in. Lightly oil aluminum foil. Lay fish onto foil, and then lightly oil fish. Season fish with salt, pepper, garlic powder, and juice of 1 lime. Top with chopped chives. Fold the foil around the fish to make a package that can go onto the grill.

  3. Place your fish package in the middle of your grill and turn the burners down to low. Cook the fish for approximately 12 minutes (time depends on thickness of fillets); turning the package 90° halfway through the cooking time. After 12-15 minutes of cooking over low heat, open foil and check fish for desired doneness. If fish is not done, keep foil open and turn up the heat on the grill. Cook until the fish is done.
